It definitely is comfort food seasons. Rich and savoury foods are my favourite this time of year. But let’s be real, although these foods are undoubtedly the best, they can be quite challenging for my diet plans. Since I do not want to give up on them, here is one of my favourite savoury recipes you do not have to pass on!
One of the best low carb vegetables is cauliflower. Have you ever tried cauliflower pizza? It is the bomb. This could only get better by adding the best kind of meat: chicken. Add some heavy cream and a few spices – et voila! The tastiest healthy-ish chicken recipe ever.
- 600g boneless, skinless chicken thighs
- 2 tbs oil
- 750g cauliflower
- 1 garlic clove
- 250g heavy cream
- 2 tbs creamy cheese spread (e.g. laughing cow cheese)
- Salt and pepper
Cut the chicken breast into strips and season to taste. Cook the cauliflower in salted water until al dente.
Brown the chicken breast in a high pan. Press in the garlic clove. Add the cream and cheese and let it melt. Season to taste with salt and pepper.
Drain the cauliflower and carefully fold into the chicken mixture.
