Happy first day of autumn everyone! For me, autumn and winter are my favourite seasons to bake. There is nothing cosier than my flat smelling of vanilla and freshly baked cookies.
And I know, cookies are great and all, but who can resist a slice of warm cheesecake? No one – and even less when it is Russischer Zupfkuchen (Russian Chocolate Cheesecake).
Now, not to honk my own horn or anything, but I am a pretty good baker. This recipe, however, is definitely not rocket science. Everyone can smash this and bake one of the best cakes ever.
So, here it is the secret to the best chocolate cheesecake!
Ingredients
For the dough:
- 180g sugar
- 200g butter
- 2 eggs
- 40g chocolate powder
- 1package of baking powder
- 300g flour
For the filling:
- 220g sugar
- 3 eggs
- 500g curd cheese (Quark)
- 200ml heavy cream
- 70g butter
Directions
For the dough, sift flour, baking powder, cocoa and sugar into a large bowl. Mix the butter and eggs with the dry ingredients and knead into a dough. Pour about three-quarters of the dough into a springform pan and line the edge well.
For the filling, whisk the butter until foamy and then mix with the heavy cream, the curd and the eggs. Put the filling on the raw dough and sprinkle the rest of the dough on top of the filling. Bake the cake at 180°C for 60 minutes.
