Of my favourite, more healthy-ish snacks is banana bread.
Now, for me, bananas are sweet enough and I do not want to add unnecessary fats to it either. So, when I found this recipe, it quickly became a favourite. It is a beautiful, fluffy, yet moist banana bread.
This simple recipe which substitutes fat with apple sauce and does not need any additional sugar or sweeteners has never failed me. And although it is simple, it is also versatile: add fruit, nuts or chocolate chips to it. So, get creative!
Tip: Banana bread freezes wonderfully. Freeze the bread as a whole or as slices. Take it out and put it in the fridge 24 hours before you want to eat it. Perfect banana bread!
Ingredients:
- 300g ripe bananas
- 200g flour
- 1 tsp cinnamon
- 100g apple sauce
- 1 tsp baking powder
- 2 eggs
- Optional: 500g chopped nuts, fruit or chocolate chips
Recipe:
Mash up the bananas and add the apple sauce. Add the eggs and mix until lightly foamy. Add flour, baking powder, cinnamon and mix well.
Optional: add chopped nuts, fruit or chocolate chips.
Add the dough into a bread baking tin and bake at 180°C and bake for 45 minutes.
